A passion for food and culture led my husband, Sarajit Chanda and I to travel to many countries around the world before we met in Sydney in 1999. I had lived and worked in Ireland, France, Italy and Spain, and travelled through South East Asia on her way to Australia. Sarajit had learned his trade in his native Bangladesh before moving to Calcutta, India where he learned North Indian cuisine. In Sydney he worked under a master of South Indian cuisine who taught him the alchemy of spices. When we moved to Dublin in 2001, I managed an Italian restaurant while Sarajit worked as head chef at Tribeca in Ranelagh. Here his fascination with world food reached its peak. He spent many hours on- and off-duty with chefs from all over the globe, as well as with his textbooks, learning dishes from various countries. His repertoire extended to Lebanese Mezze, Spanish Paella, Italian rustic dishes, French seafood, Thai curries and many more besides. In 2003, I managed Mint Restaurant in Ranelagh- a well-known restaurant in fine dining circles- from its opening stages to the attainment of great acclaim. In 2005, we decided we had enough experience under our belts to open our first restaurant. Our research led us to Ardee, Co. Louth. There we saw a gap in the market for a mid-range, family restaurant that offered people the chance to taste flavours from around the world. In July 2005, we opened Fuchsia House Restaurant on the Northern edge of the town. We started off with a comparatively conservative menu and introduced new dishes through ouir specials board. Popular demand led us to incorporate many of these into our menu, which today includes Indonesian Chicken Satay, Lebanese Mezze, Thai Red Beef Curry, Indian Curries, Italian Stuffed Chicken rolled in Pancetta, gourmet New York-style Burgers and locally-produced Angus Steak. In July 2006, Fuchsia House received a rave review from Tom Doorley, restaurant critic with The Irish Times, who included it is his gastro-tour of Ireland in August of the same year and in his favourite 20 restaurants outside Dublin in June 2008. Tom Doorley described it as “outstanding... service is utterly charming, and you will leave feeling better in every sense”. Every year since that Tom Doorley has included Fuchsia House in his annual publication of his favourite restaurants in the Irish Times. In 2006 it also received the Georgina Campbell Award and the Bridgestone Award, and many other favorable reviews. Fuchsia House is an unexpected gem on the outskirts of a provincial town and one that the locals are proud to call their own. The explosion in itspopularity of meant that we often found ourselves turning away business. Demand for our curries was becoming so great that the kitchen found itself under strain during peak times. We set about looking for premises where they could open an Indian takeaway. When the opportunity arose right on our doorstep in 2007, it was too good to turn down. In July 2007, we opened Indish Indian Takeaway. In our first week we sold out every night. Indish is based on the simple principles of freshness and authenticity. The open kitchen allows the customers to see their food being cooked to order. The food is not compromised “to suit the Irish palette” as is often the case. Instead people who are new to Indian food are advised by well-trained, helpful staff to start with something mild and they progress through the spectrum on each visit. Advice is also available for allergies and special requirements. Irish Times food writer Marie-Claire wrote in April 2008 that the food is so good it would merit the delivery fee to Dublin! The fact that Indian food was becoming a staple in many homes led people to suggest that we should sell the sauces separately so that they could use it to make a quick family dinner. The recession upped the ante somewhat on this idea. No only are people cooking at home more, they are also looking for nutritious products at fair prices. The word "foodie" has come to mean a keen shopper who is interested in culinary matters and nutrition, rather than gourmet or lavish. We are now in the process of launching a range of sauces with the tag-line "real food for real foodies". We currently have 4 curry sauces in our range which is called Aruna. However we would see ourselves extending this to include other popular sauces such as pesto and our soy & ginger salad dressing in the next few years. Our branded product will be ready for the commercial market in March. We are now looking at solutions for packaging such as cases and giftpack presentation. We are also deciding which route to choose with regard to distribution. We need to extend our shelflife while keeping this a totally natural product. We hope to begin to business with mutiples before the end of this year. If anyone thinks that we can work together on any of these issues, please come and talk to me!

Originally from England, I am a qualified Chartered Surveyor by profession, but with over 20 years of experience with the internet (my dissertation was all about interactive training for surveyors using the forerunner to html). After graduation I worked in London as a surveyor and designed my first website in 1992 for a property company. In 1999 I took a career break to set up an online internet retail business selling "Inflated Balloons". I grew this business and then in 2006 I moved to Northern Ireland (family reasons) but had to stop selling the balloons as they would burst in the post. So I looked for something else to do and set up Elevated Aspects (ElevatedAspects.com) - aerial photography and video from the ground. I also still keep my hand in on the internet side of things, and have a couple of sites I am launching this year including NIOffers.com, TandrageeOnline.com and another offering a simple, cost effective method of selling online.
